ONE POT SUN-DRIED TOMATO PASTA

Ingredients (4 servings)  

  • 300g pasta of choice 
  • 4 garlic cloves 
  • 1/2 cup (1.2 dl) sun-dried tomatoes 
  • 1 can small white beans 
  • 1 tbsp tomato paste 
  • 1/2 tsp salt 
  • 1/4 tsp black pepper 
  • 1/4 tsp chili flakes 
  • 2 1/2 cup (6 dl) Sproud Unsweetened 
  • 2 1/2 cup (6 dl) vegetable broth 

Instructions  

  • Slice the sun-dried tomatoes and add to a big deeper pan together with minced garlic and a  splash of the sun-dried tomato oil. Sauté on medium heat until the garlic is golden
  • Now add rest of the ingredients, bring to a simmer and let simmer for about 12-15 minutes or  until the pasta is done. You need to stir once in a while. If you find it too dry, just add more Sproud Unsweetened 
  • Now serve with basil on top!
