INGREDIENTS
- Cheese sauce
- 2 dl cashew nuts
- 1 dl Sproud
- 3 tbsp nutritional yeast
- 1/2 tsp salt
- 1/4 tsp onion powder
- 1/4 tsp turmeric powder
BEANS
- 2 cans of black beans
- 1 dl corn kernels
- 2 garlic cloves
- 1 tsp paprika powder
- 2 tsp cumin
- 1/2 tsp salt
TOMATO SALSA
- 6 cherry tomatoes
- 1/4 red onion
- Coriander
OTHER
- 1 salad head
- 1 red pepper
- Brown rice
- Cucumber
- Avocado
- Chili flakes
STEP BY STEP
- Start cooking the rice according to packaging
- If you do not have a powerful blender (900W +) then first boil the cashews for 5 minutes
- Add all the cheese sauce ingredients to a strong blender and mix until you get a smooth sauce (takes a while) add in more Sproud if it doesn’t goes around.
- Press a garlic clove into a hot pan with oil. Then add in rinsed beans and corn kernels and spices. Fry on medium heat until onion is browned
- Slice paprika, chop cucumber, avocado, salad and make tomato salsa in a bowl
- When the rice is done you can make your burrito bowl! Start with salad, rice, beans, avocado, cucumber, salsa and finally the cheese sauce. Top with chili flakes for extra heat.
